Our favorite bowls at a handful of Chinese, Korean, and Japanese spots
Some say there’s nothing better to cool you down when the mercury climbs than a bowl of very spicy noodles or noodle soup. Maybe it has to do with chile-laced food generating beads of perspiration, which go on to evaporate and make you feel cooler. Others point out that finishing a bowl of spicy noodles leaves you feeling cooler by contrast as the burn and tingle subside.
Whether you believe either idea, spicy food and summer go together. Here are some of our favorite noodle dishes around town that incorporate vectors of hotness —by way of fresh green or red chiles, chile paste, chile oil, dried chiles, black or white peppercorns, Sichuan peppercorns, or even wasabi or hot German mustard. Don’t forget to bring a handkerchief to mop your brow.
